In 2003, I made my first éclair for my sister-in-law; she was hooked from the very first bite! After that, I made éclairs from time to time but it wasn’t until recently that the requests started to increase. The term, "word of mouth" really took on a literal meaning because the popularity of my éclairs grew as people tasted them and then told others. Before I knew it, the orders kept coming in and that's when I said, “maybe I really have something here!”
It felt great once I realized that this was exactly what I wanted to be when I “grew” up--an éclair artist! My excitement and love for these desserts are evident with each bite. I hope that in time I will be able to open my own storefront and provide customers with my pastries and cupcakes on a full-time basis.
